Fee Fie Faux Fried Chicken (oven fried chicken)

Ingredients

1 cup corn flake crumbs

¼ cup grated parmesan cheese

1 tsp paprika

1 tsp dried marjoram 

½ tsp dried thyme 

½ tsp seasoned salt

¼ tsp each garlic powder, onion powder, and black pepper

1/8 tsp cayenne pepper

1 cup buttermilk

½ cup whole wheat flour

4 large chicken thighs

4 large chicken drumsticks

2 tbsp butter, melted

Method 

Spray a baking sheet with cooking spray. Rinse chicken and pat dry. Dip chicken pieces one at a time into the buttermilk and moisten on all sides. Coat chicken with flour. Dip in buttermilk again, then coat with the seasoned corn flake mixture. This is a messy process, but hang in there. 

Place chicken pieces on baking sheet and drizzle with the melted butter. Bake uncovered at 400° for 40 minutes.

This is the recipe as written. It’s really good, I have made it often, but I don’t follow the recipe exactly. Marjoram and cayenne pepper aren’t part of my spice collection, so I leave them out. I make “buttermilk” by adding a tbsp of vinegar to a cup of regular milk.
