St. Patrick’s Day Celebrated in Style
Many thanks to Dave Taylor, for presenting Great Grandma’s Irish Stew. He cooked before a packed house to a very appreciative audience. His always entertaining repartee made us want to sample this delicious feast and no sooner than his presentation was done we were treated to delicious Irish Soda Bread and a bowl of this stew. Thank you, thank you, thank you. Everything was just perfect. I know that the bowls at my table were cleaned down to the last crumb of bread and the last morsel of stew. Thanks to the Outreach Team who made feeding the multitudes look so easy. For those of you who missed this event, here is the recipe for a fabulous Irish Stew.
GREAT GRANDMA’S IRISH STEW
- 2 lb. beef stew meat
- 2 potatoes
- ½ turnip
- 2 onions
- 2 cloves garlic
- 3 carrots
- parsley& thyme
- 2 bay leaves
- 1 can Guinness
- 1 carton beef broth oil flour
- Salt and pepper Worcestershire sauce
Method:
1. Pat meat dry with paper towels
2. Roll meat in flour and shake off excess
3. Put a little oil in frying pan and brown meat in small batches and reserve until all meat is browned
4. Chop all vegetables to ¾ to 1 inch dice. Put some oil in soup pot, add vegetables and sweat for 3-4 minutes.
5. Add beef broth to pot
6. Add meat and bay leaves to pot
7. Pour some Guinness into frying pan to deglaze
8. Scrape deglazed mixture into soup pot
9. Add enough Guinness to cover mixture in pot
10. Stir occasionally
11. Add salt and pepper and Worcestershire sauce to taste
12. Add parsley and thyme to your liking
13. Simmer on low heat for 3 hours with the lid on the pot
14. Serve with soda bread, wheaten bread or crusty Italian bread.
